It all started 15 years ago on Labor Day weekend. My daughter was almost two years old and we had been to more doctor’s offices in the past 18 months than some people go to in a life time. Why could no one figure out what was wrong? Why was she napping 4 hours a day? Why had her development slowed? And why did she stand in the hallway and vomit one morning for no apparent reason? The week before Labor Day back in 2008, we finally saw a pediatrician who knew from the moment he looked at her that something wasn’t right. He ordered x-rays: did she have a blockage in her stomach or intestines? He ordered blood work: did she have Celiac Disease or Crohn’s? I had never heard of these diseases before that day. Before that day was over, after reading and scouring the internet for hours trying to understand what might be wrong, I knew without question that she had Celiac Disease. Her symptoms matched the Celiac symptoms I was reading about and I started to realize that what I had been witnessing over the last 18 months was her body attacking itself. Her little digestive system was severely inflamed and depleting her body of the nutrients she desperately needed to grow and thrive. From that day forward our lives changed forever. We began our journey of living a gluten free lifestyle and along the way we have learned to understand and appreciate how food has the power to heal or hurt you.
